when I upgrade to the latest 3dfx reference drivers which specifically support DirectX 6 and enhanced SLI support then GPL hangs as soon as I move the mouse or type into the driver name field. I have tried re-installing DX6, new 3dfx drivers and GPL in different orders but still the problem occurs.

I think that SLI support was initially only written for Glide, and that D3D support for SLI did not come along until only very recently. Perhaps they still have some bugs to work out and lots of optimization to do on that front? By the way, where's the evidence to back up your statement above?
